Instructions

  1. Peel and chop the peaches into roughly 1-inch pieces.
  2. Place chopped peaches in the slow cooker. Add sugar, lemon juice, cinnamon, vanilla extract, and salt. Stir gently to combine.
  3. Cook on low for 3 to 4 hours, stirring once or twice if possible, until peaches are very tender and thick like jam.
  4. Use an immersion blender to puree the peach mixture until smooth and creamy. Alternatively, blend in batches in a regular blender, being cautious with hot mixture.
