Instructions

  1. Preheat your oven to 350°F (175°C). Lightly butter a 9×13 inch baking dish.
  2. Slice the potatoes thinly, about 1/8 inch thick, using a mandoline or sharp knife for uniform slices.
  3. In a medium saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant but not browned.
  4. Whisk in the flour to the butter and garlic mixture, stirring constantly to form a roux. Cook for 1-2 minutes until it bubbles lightly but remains pale.
  5. Gradually whisk in the heavy cream and milk, stirring constantly to avoid lumps. Bring the mixture just to a simmer; it will thicken slightly. Add thyme, onion powder (if using), salt, and pepper to taste.
  6. Remove the cream sauce from heat and stir in half of the shredded Gruyere cheese until melted and smooth.
  7. Arrange half of the potato slices in an even layer in the prepared baking dish. Pour half the cheese sauce over the potatoes, spreading gently to cover.
  8. Repeat the layering with the remaining potatoes and cheese sauce. Sprinkle the remaining Gruyere cheese on top.
  9. Cover the dish tightly with aluminum foil and bake for 45 minutes.
  10. Remove the foil and bake uncovered for an additional 20-25 minutes until the top is golden and bubbly and potatoes are tender when pierced with a fork.
  11. Let the scalloped potatoes rest for 10 minutes before serving.
