Instructions

  1. Soften the cream cheese by letting it sit at room temperature for about 30 minutes or microwave in 10-second bursts until soft but not melted.
  2. Shred the sharp cheddar cheese finely using a grater.
  3. Drain and chop the roasted red pimentos coarsely.
  4. In a medium mixing bowl, combine the softened cream cheese and mayonnaise. Stir until smooth and fully incorporated.
