  • Olive oil, for brushing bread slices
  • Fresh thyme or rosemary sprigs (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off a whole garlic bulb to expose cloves. Drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft and caramelized. Let cool.
  2. Slice baguette into ¼-inch rounds. Brush each slice with olive oil on both sides. Arrange on a baking sheet and toast in the oven for 8-10 minutes or until golden and crisp, flipping halfway through.
  3. Remove rind from brie and cut into chunks. In a mixing bowl, combine brie chunks and softened cream cheese. Using an electric mixer, whip on medium-high speed for 2-3 minutes until smooth and airy. Season lightly with salt and pepper.
  4. Squeeze softened garlic cloves out of the bulb into a small bowl. Add honey and mix gently until combined.
  5. Transfer whipped brie mixture to a serving bowl. Drizzle roasted garlic honey over the top. Sprinkle toasted walnuts generously over the dip.
  6. Garnish with fresh thyme or rosemary sprigs if desired. Serve immediately with crostini on the side.
