Creamy White Bean Dip with Roasted Garlic and Herbs

A silky, fragrant dip made from white beans, roasted garlic, and fresh herbs, perfect for snacks or gatherings. This creamy dip is quick to prepare, uses simple pantry staples, and offers a comforting, fresh flavor.

  • 1 can (15 oz / 425 g) cannellini or great northern beans, drained and rinsed
  • 1 whole head of garlic, roasted until soft and golden
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon chopped fresh thyme
  • 2 tablespoons chopped fresh parsley
  • Juice of half a lemon (about 1 tablespoon)
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: pinch of smoked paprika
  • Optional: small drizzle of honey
  • Optional: 1-2 tablespoons tahini or plain Greek yogurt for extra creaminess

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head to expose cloves. Drizzle with 1 teaspoon olive oil, wrap tightly in foil, and roast for 35-40 minutes until soft and golden.
  2. Drain and rinse the white beans thoroughly under cold water.
  3. In a food processor, combine rinsed beans, roasted garlic cloves (squeezed out of skins), olive oil, lemon juice, salt, and pepper. Blend until smooth but with some body, scraping down sides as needed.
  4. Add chopped thyme and parsley, pulse a few times to incorporate without over-blending. Adjust seasoning with salt, pepper, or lemon juice. Add a splash of water or more olive oil if too thick.
  5. Optional: Refrigerate dip for at least 30 minutes to let flavors meld. Serve chilled or at room temperature with pita chips, fresh veggies, or crusty bread.

Notes

Roast garlic wrapped tightly in foil to trap steam and keep it soft and sweet. Rinse canned beans thoroughly to remove excess sodium and canned taste. Pulse blending in short bursts to control texture and avoid overheating. Fresh herbs provide best flavor; dried herbs can be used in smaller amounts. Roasted garlic can be prepared ahead and refrigerated for up to 1 week or frozen for longer storage.
