These crispy air fryer egg rolls feature a juicy pork and veggie filling wrapped in a golden, crunchy shell. Ready in under 30 minutes, they make a quick, tasty snack or appetizer without the grease of deep-frying.

  • 1 cup shredded cabbage (green or Napa, finely chopped)
  • 1/2 cup grated carrot
  • 2 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon soy sauce (low sodium preferred)
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1012 egg roll wrappers
  • 1 egg, beaten (for sealing wrappers)
  • Optional dipping sauce: soy sauce or tamari, rice vinegar, honey or brown sugar, chopped fresh chili or chili flakes

Instructions

  1. Prepare the Filling (10-15 minutes): Heat a skillet over medium heat and add the ground pork. Break it up and cook until no longer pink, about 5 minutes. Drain excess fat if needed.
  2. Add minced garlic and grated ginger to the pork, stirring for about 1 minute until fragrant.
  3. Stir in shredded cabbage, grated carrot, and green onions. Cook for 3-4 minutes until veggies soften but retain some bite.
  4. Season with soy sauce, toasted sesame oil, black pepper, and red pepper flakes if using. Stir well and cook for 1 more minute. Remove from heat and let cool slightly.
  5. Assemble the Egg Rolls (10 minutes): Lay an egg roll wrapper on a clean surface with one corner pointing towards you.
  6. Place about 2 tablespoons of filling near the corner closest to you, leaving about an inch on the sides.
  7. Fold the corner over the filling, then fold in the left and right corners snugly.
  8. Roll tightly towards the top corner, brush the edge with beaten egg to seal, and press gently to close.
  9. Repeat with remaining wrappers and filling, avoiding overfilling.
  10. Cook in the Air Fryer (12-15 minutes): Preheat air fryer to 370°F (190°C) for 3 minutes.
  11. Place egg rolls in a single layer in the basket without touching. Cook for 6-7 minutes, flip, then cook another 6-7 minutes until golden and crispy.
  12. If air fryer is small, cook in batches to avoid overcrowding.
  13. Serve: Let egg rolls cool for a minute or two before serving. Enjoy with soy dipping sauce or favorite chili sauce.

Notes

Do not overfill wrappers to avoid bursting. Pat filling dry if too wet to keep wrappers crisp. Flip egg rolls halfway through cooking for even crispiness. Preheat air fryer before cooking. Cook in batches if needed. For gluten-free, use rice paper wrappers and tamari instead of soy sauce. Filling can be prepared a day ahead and refrigerated.
