A quick and easy recipe for perfectly crispy chicken drumsticks coated in a sweet and spicy honey sriracha glaze, cooked in the air fryer for a light yet indulgent meal.

Ingredients

Scale
  • 8 chicken drumsticks (about 2 pounds), skin-on and bone-in
  • 3 tablespoons honey (raw or wildflower preferred)
  • 2 tablespoons sriracha sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Pat the drumsticks dry with paper towels (about 5 minutes).
  2. Season all over with salt, black pepper, garlic powder, and smoked paprika.
  3. Toss the drumsticks in a mixing bowl with olive oil until evenly coated.
  4. In a small bowl, whisk together honey, sriracha, and lemon juice to make the glaze. Adjust sriracha to taste.
  5. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  6. Place the drumsticks in a single layer in the air fryer basket, leaving space between each piece.
  7. Cook for 12 minutes.
  8. Flip the drumsticks using tongs and brush the first round of honey sriracha glaze over each piece generously.
  9. Return to the air fryer and cook for another 8 minutes.
  10. Brush on a second layer of glaze and cook for an additional 5 minutes to set the glaze and achieve a sticky, crispy finish.
  11. Check that the internal temperature reaches 165°F (74°C) and the skin is crispy and caramelized.
  12. Let the drumsticks rest for 5 minutes before serving to allow juices to redistribute.

Notes

Pat chicken dry before seasoning for best crispiness. Do not overcrowd the air fryer basket to ensure even cooking and crisp skin. Brush glaze twice during cooking for maximum flavor and sticky coating. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Rest drumsticks before serving to keep glaze tacky but not runny. For reheating, use air fryer at 350°F for 5-7 minutes to maintain crispiness. Variations include using gochujang instead of sriracha, tossing drumsticks in almond flour for extra crunch, or reducing honey for a low-sugar version.
