  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon heavy cream or milk (optional, to loosen filling)
  • Powdered sugar for dusting (optional)
  • Almond flour (optional, for gluten-free crust if using gluten-free puff pastry)

Instructions

  1. In a bowl, combine diced strawberries, sugar, and lemon juice. Let sit for 10-15 minutes to create a jammy texture.
  2. In another bowl, beat softened cream cheese with powdered sugar and vanilla until smooth. Add heavy cream a little at a time if a softer consistency is desired.
  3. Lightly flour your workspace and roll the thawed puff pastry sheet to smooth out creases, about 12 by 12 inches.
  4. Cut the pastry into 4 or 6 equal squares depending on preferred size.
  5. Place about 1 tablespoon of cream cheese filling in the center of each square, then top with 1 tablespoon of the strawberry mixture, leaving a 1/2-inch border around edges.
  6. Fold the pastry over to form a triangle or rectangle and press edges gently.
  7. Use a fork to seal the edges firmly, creating a decorative seal to prevent filling leakage.
  8. Beat the egg with 1 tablespoon of water and brush the tops and edges of each pie with the egg wash.
  9. Preheat the air fryer to 350°F (175°C) for 3-5 minutes.
  10. Place the pies in the air fryer basket in a single layer with space between them.
  11. Cook for 10-12 minutes, flipping halfway through, until golden and puffed. Start checking at 8 minutes if your air fryer runs hot.
  12. Transfer pies to a cooling rack and let cool for 5 minutes to crisp further.
