A quick and easy tart featuring flaky puff pastry, creamy goat cheese, and tender-crisp asparagus, perfect for weeknights or entertaining.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 1 bunch fresh asparagus, trimmed
  • 4 ounces soft goat cheese
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Zest of 1 lemon
  • 1 teaspoon fresh thyme, chopped (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 egg beaten with 1 tablespoon water (egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Trim the woody ends off the asparagus stalks (about 1-2 inches). Cut the stalks in half if very long. Toss them gently in a bowl with olive oil, minced garlic, salt, and pepper. Set aside.
  3. On a lightly floured surface, unfold the thawed puff pastry sheet. Using a sharp knife, score a 1-inch border all around the pastry without cutting all the way through.
  4. In a small bowl, combine the goat cheese with lemon zest, chopped fresh thyme, and a pinch of salt and pepper. Stir until creamy and well blended.
  5. Spread the goat cheese mixture evenly within the scored border on the puff pastry. Arrange the asparagus spears neatly on top, slightly overlapping if needed.
  6. Lightly brush the egg wash around the edges of the puff pastry.
  7. Bake the tart in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown and the asparagus is tender but still crisp.
  8. Let the tart cool on the baking sheet for 5 minutes before slicing. Serve warm or at room temperature.

Notes

If edges brown too quickly, cover loosely with foil halfway through baking. For extra flavor, sprinkle flaky sea salt over asparagus before serving. Avoid rushing thawing puff pastry to prevent tearing. Egg wash should be applied lightly to avoid sogginess. Leftovers keep well refrigerated for up to 3 days and reheat best in oven at 350°F for 10 minutes.
