A quick and easy appetizer featuring jalapeños stuffed with a creamy cheese filling, wrapped in crispy bacon for a perfect balance of spicy, creamy, and smoky flavors.

  • 10 medium jalapeños
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (50 g) shredded cheddar cheese
  • 10 slices thick-cut bacon
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder (optional)
  • Salt and black pepper to taste
  • Optional: pinch of smoked paprika or cayenne pepper
  • Optional: chopped fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wearing gloves, slice each jalapeño in half lengthwise and scoop out seeds and membranes if less heat is desired. Pat dry with paper towels.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  4. Fill each jalapeño half with the cheese mixture, leaving a slight mound to prevent spillage.
  5. Wrap each stuffed jalapeño half with one slice of bacon, overlapping slightly to secure. Use toothpicks if needed.
  6. Place a wire rack on a rimmed baking sheet and arrange the poppers seam side down on the rack.
  7. Bake for 20-25 minutes, checking after 15 minutes to avoid burning. Bacon should be golden and crispy, cheese bubbly.
  8. Let poppers rest for 5 minutes before serving.

Notes

Use gloves when handling jalapeños to avoid irritation. Dry jalapeños well to keep bacon crispy. Flip poppers halfway through baking if not using a wire rack. For extra crispiness, broil for 1-2 minutes at the end, watching carefully. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven to maintain crispiness.
