  • 4 to 6 slices thick-cut bacon, chopped
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced

  • 1 tablespoon fresh lemon juice (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Trim the ends and remove any yellow or damaged leaves from Brussels sprouts. Slice them in half lengthwise, rinse, and pat dry thoroughly.
  2. Heat a large skillet over medium heat. Add chopped bacon and cook until crisp and golden, about 6-8 minutes. Remove bacon with a slotted spoon and drain on paper towels. Leave about 1 tablespoon of bacon fat in the pan.
  3. Add unsalted butter to the pan with the bacon fat and melt over medium-low heat. Stir frequently until the butter foams and turns golden brown with a nutty aroma, about 4 minutes. Remove from heat immediately.
  4. Increase heat to medium-high and add Brussels sprouts cut-side down. Sprinkle with salt and pepper. Cook undisturbed for 4-5 minutes until cut sides are deeply golden and crispy. Flip and cook another 3-4 minutes until tender and browned all over.
  5. Add minced garlic and cooked bacon to the pan. Stir and cook for 1-2 minutes until garlic is fragrant but not burnt.
  6. Pour the browned butter over the sprouts mixture. Add fresh lemon juice and red pepper flakes if using. Toss gently to coat evenly.
  7. Serve immediately while hot and crispy.

Dry Brussels sprouts thoroughly before cooking to ensure crispiness. Cook in batches if the pan is crowded to avoid steaming. Watch the butter carefully to prevent burning; the nutty aroma is your guide. Reheat leftovers gently in a skillet to maintain crisp texture.
