  • 1 teaspoon honey or maple syrup
  • 1/2 cup mayonnaise (use vegan mayo if preferred)
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup crumbled blue cheese (Maytag or Stilton recommended)
  • 1 teaspoon dried dill
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 450°F (230°C). Cut cauliflower into bite-sized florets and pat dry.
  2. In a large bowl, whisk together flour, water, garlic powder, smoked paprika, salt, and pepper until smooth and thick like pancake batter.
  3. Dip each cauliflower floret into the batter, letting excess drip off, then place on a parchment-lined baking sheet in a single layer.
  4. Bake for 20 minutes, flipping halfway through, until golden and crisp on edges.
  5. While baking, mix hot sauce, melted butter, and honey in a bowl until combined.
  6. Remove cauliflower from oven and toss gently in buffalo sauce to coat evenly. Return to baking sheet and bake for an additional 10 minutes to caramelize sauce and crisp coating.
  7. In a medium bowl, combine mayonnaise, sour cream or Greek yogurt, crumbled blue cheese, dried dill, garlic powder, onion powder, lemon juice, salt, and pepper. Stir well and chill until serving.
  8. Let cauliflower bites cool slightly, then serve warm with ranch blue cheese dip on the side.

Notes

Dry cauliflower thoroughly before battering to ensure crispiness. Adjust batter consistency with water if too thick. Flip cauliflower halfway through baking for even browning. Toss bites in buffalo sauce off heat to prevent sogginess before final bake. Broil 1-2 minutes if extra crispiness is desired. Dip can be made a day ahead to meld flavors. For gluten-free, use chickpea or almond flour; for dairy-free, use vegan butter and plant-based blue cheese alternatives. Air frying is a great alternative cooking method.
