  • 1 cup fresh raspberries, washed and patted dry
  • ½ cup sliced almonds, toasted
  • ½ teaspoon vanilla extract (optional)
  • Milk or yogurt for serving (any type preferred)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Tear the day-old croissants into bite-sized pieces, about 1-inch chunks.
  3. In a medium mixing bowl, combine melted unsalted butter, granulated sugar, ground cinnamon (if using), and vanilla extract (if using).
  4. Toss the croissant pieces gently in the butter mixture until evenly coated.
  5. Spread the coated croissant pieces in a single layer on the prepared baking sheet, avoiding overcrowding.
  6. Bake for 12-15 minutes, stirring halfway through, until golden brown and crisp.
  7. While croissants bake, toast sliced almonds in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant and lightly browned.
  8. Remove croissant cereal from oven and transfer to a cooling rack to stay crisp.
  9. Once cooled, combine the crispy croissant cereal, toasted almonds, and fresh raspberries in a bowl or serve separately.
  10. Serve with your choice of milk or dollops of yogurt.

Notes

Use day-old croissants for best crispiness. Add raspberries just before serving to keep them fresh and prevent sogginess. Store cereal in an airtight container at room temperature for up to 3 days.
