Crispy Dinosaur Chicken and Rice Recipe Easy Homemade Dinner with Fresh Veggies

A quick and easy weeknight dinner featuring crispy dinosaur-shaped chicken nuggets served with fluffy rice and fresh sautéed veggies. This kid-friendly and satisfying meal balances crunchy textures with vibrant flavors.

  • 12 dinosaur-shaped chicken nuggets (frozen or fresh)
  • 1 cup white or brown rice (190g), cooked
  • 1 cup fresh bell peppers, diced (red, yellow, or orange)
  • 1/2 cup carrots, shredded or thinly sliced
  • 1/2 cup frozen green peas
  • 2 stalks green onions, sliced
  • 1 tablespoon olive oil (extra virgin preferred)
  • 2 tablespoons soy sauce (low sodium preferred)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish or toasted sesame oil for finishing

Instructions

  1. Rinse 1 cup (190g) of rice under cold water until the water runs clear. In a medium saucepan, combine rice with 2 cups (480ml) water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes (white rice) or about 40 minutes (brown rice) until water is absorbed and rice is tender. Remove from heat and let it sit covered for 5 minutes.
  2. While rice cooks, heat 1 tablespoon olive oil in a large skillet over medium heat. Add the frozen dinosaur chicken nuggets (about 12 pieces) and cook for 4-5 minutes per side until golden brown and crispy. Use a spatula to flip carefully. Once cooked, transfer the chicken to a plate and tent with foil to keep warm.
  3. In the same skillet, add minced garlic and diced bell peppers. Cook for 2 minutes until fragrant, then add shredded carrots and frozen peas. Stir occasionally, cooking for another 3-4 minutes until veggies are tender but still crisp. Season with salt and pepper to taste.
  4. Fluff the rice with a fork and add it to the skillet with the sautéed veggies. Pour in 2 tablespoons soy sauce and sliced green onions. Stir well to combine all ingredients evenly and heat through for 2 minutes. Taste and adjust seasoning if needed.
  5. Arrange the rice and veggie mixture on plates, then top with the crispy dinosaur chicken. Optionally, sprinkle with sesame seeds or drizzle a little toasted sesame oil for extra flavor.

Notes

Keep an eye on the chicken to avoid overcooking and losing crispiness. Let rice rest covered after cooking to keep it fluffy. Use a hot pan and avoid crowding the skillet to maintain chicken crispness. Reheat leftovers in a skillet to revive crispiness; avoid microwaving directly.
