These crispy Easter egg cookie nests are a quick and easy festive treat combining buttery cookies, crunchy cereal, and colorful candy eggs, perfect for Easter celebrations.

  • 1 cup (225g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 ¾ cups (220g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups (60g) crispy rice cereal
  • Mini candy-coated chocolate eggs (about 2 dozen)
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together melted butter and granulated sugar until smooth and glossy, about 2 minutes. Add egg and vanilla extract, mixing until fully combined.
  3. In a separate bowl, sift together flour, baking powder, and salt.
  4. Gradually add dry ingredients into wet ingredients, stirring gently until just combined. Dough will be thick but pliable.
  5. Fold in crispy rice cereal carefully to coat evenly without crushing.
  6. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the baking sheet. Press down the center of each mound to form a small well or nest shape.
  7. Bake for 12-14 minutes until edges are light golden brown.
  8. Let nests cool on baking sheet for 5 minutes, then transfer to a cooling rack.
  9. While nests are warm but not hot, gently press 3-4 mini candy eggs into the center of each nest.
  10. Optional: Once fully cooled, dust nests lightly with powdered sugar.
  11. Store in an airtight container at room temperature for up to 3 days or freeze for longer storage.

Notes

Use melted butter to help bind the cereal and create a chewy texture. Avoid overbaking to keep edges golden but not brown. Press candy eggs into nests while warm but not hot to prevent melting. Chill dough if too sticky before shaping. Do not bake candy eggs with the nests to preserve their color and crunch.
