Golden, crispy smashed potatoes with a punchy everything bagel seasoning and garlic herb butter, perfect as a flavorful snack or side dish.

  • 1.5 pounds baby potatoes or small Yukon gold potatoes
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • 3 cloves fresh garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 2 tablespoons everything bagel seasoning
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and boil the potatoes in a large pot with cold water and a pinch of salt for 15-20 minutes until fork-tender but not falling apart.
  3. Drain and let the potatoes cool for about 5 minutes until warm enough to handle.
  4. In a small bowl, mix melted butter, olive oil, minced garlic, chopped rosemary, and thyme to prepare garlic herb butter.
  5. Place potatoes on a parchment-lined baking sheet and gently smash each potato to about 1/2 inch thickness using a potato masher or the bottom of a glass.
  6. Brush the smashed potatoes generously with the garlic herb butter.
  7. Season with salt and freshly ground black pepper evenly over the potatoes.
  8. Roast in the oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  9. Remove from oven and immediately sprinkle everything bagel seasoning over the hot potatoes, tossing gently to coat.
  10. Optional: Sprinkle grated Parmesan cheese on top and return to oven for 3-5 minutes to melt.
  11. Serve warm and enjoy.

Notes

Do not overcrowd the pan to ensure crispiness. Flip potatoes halfway through baking for even browning. Use fresh herbs for best flavor. Toss everything bagel seasoning after baking to keep it crunchy. For vegan version, substitute butter with plant-based spread and Parmesan with nutritional yeast.
