A quick and easy grilled garlic bread recipe with a perfect crispy-cheesy balance, ideal for comfort food lovers. This recipe uses simple ingredients and grilling technique to create a warm, gooey, and crunchy treat.

Ingredients

Scale
  • 1 loaf rustic Italian or French bread (day-old or slightly stale)
  • 4 tablespoons unsalted butter, softened
  • 3 cloves fresh garlic, finely minced
  • 1 cup shredded cheese (50/50 sharp cheddar and mozzarella blend)
  • 2 tablespoons fresh parsley, chopped (optional)
  • Pinch of salt
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil (optional, for brushing grill or bread edges)

Instructions

  1. Prepare the garlic butter: In a small bowl, mix softened butter with minced garlic, chopped parsley, salt, and pepper until well combined (about 5 minutes).
  2. Slice the bread into 1-inch thick slices (about 3 minutes).
  3. Spread a generous layer of garlic butter mixture on one side of each bread slice, covering the entire surface but avoiding dripping edges.
  4. Sprinkle shredded cheese evenly over the buttered side, about 1/4 cup per slice.
  5. Preheat grill pan or outdoor grill to medium heat (around 350°F). Brush grill grates or pan lightly with olive oil to prevent sticking (5-7 minutes).
  6. Place slices cheese-side up on the grill. Cover with a lid if using a pan to help cheese melt evenly. Grill for 3-4 minutes until bread edges are golden and cheese starts bubbling.
  7. Flip slices carefully using tongs or spatula to toast the plain side for another 2-3 minutes until crispy and golden brown. Watch closely to avoid burning.
  8. Remove grilled garlic bread from grill and transfer to serving plate. Let cool for 1-2 minutes before serving.

Notes

Use day-old or slightly stale bread for best crispiness. Medium heat is key to avoid burning the bread before cheese melts. Cover the pan or grill while grilling cheese-side up to trap heat and melt cheese evenly. Avoid overloading butter or cheese to prevent sogginess or melting off. For gluten-free, use gluten-free bread; for dairy-free, use plant-based butter and vegan cheese alternatives.
