  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups (170 g) shredded cheese blend (sharp cheddar and Monterey Jack)
  • 1/2 cup (90 g) black beans, rinsed and drained
  • Sliced jalapeños (optional, to taste)
  • Diced tomatoes or pico de gallo
  • Sour cream
  • Sliced green onions
  • Fresh cilantro

Instructions

  1. Preheat your oven broiler to high and position the rack about 6 inches from the heat source.
  2. Heat 1 tablespoon (15 ml) of oil in a large skillet over medium-high heat. Add the finely chopped onion and minced garlic cloves. Sauté until soft and fragrant, about 3 minutes.
  3. Add the ground beef, breaking it up with a spatula. Cook until browned, about 6-8 minutes.
  4. Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Mix well and let the spices toast with the beef for another 2 minutes. Taste and adjust seasoning as needed.
  5. Spread a generous layer of tortilla chips on a baking sheet or oven-safe dish.
  6. Evenly distribute the cooked beef over the chips.
  7. Sprinkle shredded cheese blend liberally over the beef and chips.
  8. Scatter black beans and sliced jalapeños (if using) over the cheese layer.
  9. Place the tray under the broiler for 3-5 minutes, watching closely until the cheese melts and bubbles with golden edges.
  10. Remove from oven and top with diced tomatoes or pico de gallo, sliced green onions, and fresh cilantro.
  11. Add dollops of sour cream on top.
