Instructions

  1. In a large mixing bowl, combine 3 cups (360 g) of all-purpose flour, 1/4 teaspoon instant yeast, and 1 1/2 teaspoons salt. Stir to evenly distribute yeast and salt.
  2. Pour in 1 1/2 cups (360 ml) lukewarm water. Stir with a wooden spoon or spatula until a shaggy, sticky dough forms, about 2-3 minutes.
  3. Cover the bowl with a kitchen towel or plastic wrap and let the dough rise at room temperature for 12 to 18 hours until bubbly and doubled in size.
  4. Lightly flour a clean surface and your hands. Scrape the dough onto the surface and fold it over itself gently a few times to form a rough ball. Cover and rest for 30-60 minutes.
  5. About 30 minutes before baking, preheat your oven to 450°F (230°C) with a Dutch oven and lid inside.
  6. Carefully remove the hot Dutch oven from the oven. Using parchment paper, lift the dough ball and place it inside the pot. Cover with the lid.
  7. Bake for 30 minutes with the lid on to trap steam and create a crispy crust.
  8. Remove the lid and bake for an additional 10-15 minutes until the crust is browned and the bread sounds hollow when tapped.
  9. Transfer the loaf to a wire rack and cool completely before slicing.

Do not rush the long rise; it develops flavor and texture. Use lukewarm water to activate yeast gently. Use a heavy pot with a tight lid to trap steam for a crispy crust.
