  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, finely chopped

  • 34 tbsp olive oil for frying
  • For the lemon garlic dip:
  • ½ cup (120g) plain Greek yogurt (or dairy-free coconut yogurt for vegan option)
  • 1 tbsp freshly squeezed lemon juice
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and trim the zucchini, then shred finely using a box grater or food processor (about 3 cups or 360g shredded).
  2. Transfer shredded zucchini into a clean kitchen towel or cheesecloth. Twist tightly to squeeze out as much liquid as possible (expect to remove at least ½ cup of water).
  3. In a large bowl, combine dried zucchini, grated Parmesan, breadcrumbs, beaten eggs, minced garlic, chopped parsley, salt, and black pepper. Mix gently until just combined; mixture should hold together when pressed.
  4. Heat 3 tablespoons olive oil in a non-stick or cast-iron skillet over medium heat until shimmering but not smoking.
  5. Scoop about 2 tablespoons (30g) of batter per fritter, flatten slightly into round patties, and carefully place in hot oil without overcrowding. Fry 3-4 minutes per side until golden brown and crispy. Adjust heat as needed.
  6. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
  7. While frying, mix Greek yogurt, lemon juice, minced garlic, olive oil, salt, and pepper in a small bowl. Adjust seasoning to taste.
  8. Serve fritters warm with a side of lemon garlic dip. Garnish with extra parsley or lemon zest if desired.

Squeezing out zucchini moisture is crucial for crisp fritters. Use freshly grated Parmesan for best flavor and texture. Fry at medium heat to avoid soggy or burnt fritters.
