  • 4 oz (115 g) cream cheese, softened
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract

  • 2 ripe peaches, thinly sliced
  • 1 tbsp brown sugar
  • 1/2 tsp ground cinnamon (optional)
  • 1/2 cup (60 g) powdered sugar
  • 12 tbsp milk (dairy or plant-based)
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a mixing bowl, beat together softened cream cheese, granulated sugar, vanilla extract, and lemon juice until smooth and creamy. Set aside.
  3. Unfold the thawed sheet of puff pastry on a lightly floured surface. Score a 1-inch border around the edges without cutting all the way through.
  4. Transfer the puff pastry to the lined baking sheet. Spread the cream cheese filling evenly inside the scored border.
  5. Arrange thinly sliced peaches over the cream cheese layer. Sprinkle with brown sugar and cinnamon if using.
  6. Beat the egg with 1 tbsp water and brush the edges of the puff pastry with the egg wash.
  7. Bake for 20-25 minutes, or until the pastry is puffed and golden and the peaches are bubbling slightly.
  8. While baking, whisk together powdered sugar, milk, and vanilla extract until smooth to make the glaze.
  9. Remove the danish from the oven and let it cool on a rack for 10 minutes. Drizzle the vanilla glaze over the warm danish.
  10. Serve warm or at room temperature.
