  • 1 pound ground Italian sausage (mild or spicy, casing-free)
  • 1 package stuffing mix (approximately 6 ounces)
  • 1 cup chicken broth
  • 1 medium onion, finely chopped
  • 2 stalks celery, finely chopped
  • 2 tablespoons butter
  • 1 large egg
  • 1 teaspoon dried sage
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it.
  2. In a non-stick skillet over medium heat, cook the ground sausage until browned and fully cooked, breaking it into crumbles as it cooks. Remove from heat and let it cool slightly.
  3. In the same skillet, melt the butter over medium heat. Add the chopped onion and celery, cooking until softened and fragrant, about 5 minutes. Season lightly with salt and pepper.
  4. In a large mixing bowl, combine the stuffing mix, cooked sausage, sautéed onion and celery, and dried sage. Stir to combine.
  5. Pour in the chicken broth and crack the egg into the mixture. Stir until everything is evenly combined. The mixture should be moist but not overly wet. Add more broth if needed.
  6. Use a cookie scoop or spoon to portion out the mixture, then roll each portion into a ball using your hands. Aim for golf ball-sized portions.
  7. Place the stuffing balls on the prepared baking sheet, leaving space between each one. Brush lightly with olive oil.
  8. Bake for 20-25 minutes, or until the stuffing balls are golden brown and crisp on the outside.
  9. Let them cool for a few minutes before serving. Enjoy warm or at room temperature.
