These crispy savory bacon cheddar waffles combine the salty crunch of bacon with melted sharp cheddar inside a golden waffle shell, making a perfect quick and easy breakfast or brunch.

  • 2 cups (240 g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs, room temperature
  • 1 ¾ cups (420 ml) milk (whole or 2%)
  • ½ cup (115 g) unsalted butter, melted
  • 1 ½ cups (170 g) sharp cheddar cheese, shredded
  • 8 slices crispy bacon, cooked and chopped
  • 1 tablespoon fresh chives or parsley, finely chopped (optional)

Instructions

  1. Preheat your waffle iron for about 5 minutes until hot.
  2. Cook 8 slices of bacon until crispy, drain on paper towels, and chop into small pieces. Save some bacon fat if desired to brush on the waffle iron.
  3. In a large bowl, whisk together flour, baking powder, salt, and black pepper.
  4. In a separate bowl, beat eggs, then stir in milk and melted butter until smooth.
  5. Pour wet ingredients into dry ingredients and gently fold together with a spatula; do not overmix, a few lumps are okay.
  6. Fold in shredded cheddar cheese, chopped bacon, and optional herbs gently to distribute evenly.
  7. Lightly grease the waffle iron if needed. Pour about ¾ cup (180 ml) of batter onto the center of the iron, close, and cook for 4-5 minutes or until steam stops and waffles are golden brown with crispy edges.
  8. Carefully remove waffles and place on a cooling rack to keep crisp. Repeat with remaining batter.
  9. Serve warm, optionally with sour cream or maple syrup.

Notes

Use a hot waffle iron for crispy waffles. Drain bacon well to avoid soggy waffles. Do not overmix batter to keep waffles tender. Let batter rest 5 minutes if waffles aren’t crisping well. Use sharp cheddar for best flavor and melt. Store leftovers in airtight container in fridge up to 2 days or freeze. Reheat in toaster or oven to restore crispness.
