A quick and easy recipe for crispy, spiced chickpeas that make a healthy and addictive snack. Perfectly crunchy with a smoky, mildly spicy flavor.

  • 1 (15 oz / 425 g) can of chickpeas, drained and rinsed
  • 1 tablespoon olive oil (extra virgin preferred)
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon sea salt (or to taste)
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Drain and rinse chickpeas thoroughly using a colander under cold water for 1-2 minutes. Lay them out on a clean kitchen towel or paper towels and gently pat dry.
  3. Remove any loose skins from the chickpeas (optional).
  4. Transfer chickpeas to a mixing bowl. Add olive oil and toss well to coat evenly.
  5. Mix smoked paprika, ground cumin, garlic powder, cayenne pepper (if using), sea salt, and black pepper. Sprinkle over chickpeas and toss until coated.
  6. Spread chickpeas evenly on the prepared baking sheet in a single layer without overcrowding.
  7. Roast in the oven for 25-30 minutes, shaking or stirring every 10 minutes to ensure even cooking. Chickpeas should be golden brown and crunchy.
  8. Remove from oven and let cool completely on the baking sheet to crisp up further.
  9. Store cooled chickpeas in an airtight container for up to one week.

Notes

Dry chickpeas thoroughly before roasting to ensure crispiness. Stir or shake chickpeas every 10 minutes during roasting for even browning. Cool completely before storing. For extra crispiness, reheat in oven for 5-7 minutes if needed. Can be made in an air fryer at 390°F for 15 minutes with shaking halfway through.
