  • 1/3 cup whole milk
  • 1 teaspoon ground cinnamon
  • 2 tablespoons turbinado sugar or coarse sugar
  • Vanilla ice cream, for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish lightly with butter or non-stick spray.
  2. In a large bowl, combine blueberries, raspberries, and blackberries. Add 3/4 cup sugar, 2 tablespoons cornstarch, 1 teaspoon lemon juice, and 1/2 teaspoon vanilla extract. Toss gently until berries are evenly coated. Let sit for about 10 minutes.
  3. In a separate bowl, whisk together 1 cup flour, 2 tablespoons sugar, 1 teaspoon baking powder, 1/4 teaspoon salt, and 1 teaspoon cinnamon.
  4. Add cold, cubed butter to the flour mixture. Use a pastry cutter or two knives to cut butter into dry ingredients until mixture is coarse and crumbly with pea-sized bits of butter.
  5. Pour in 1/3 cup milk and stir gently with a spatula just until dough comes together. Do not overmix.
  6. Pour berry filling into prepared baking dish, spreading evenly. Drop topping by spoonfuls over berries, leaving some gaps.
  7. Sprinkle 2 tablespoons turbinado sugar over the topping for crunch.
  8. Bake for 35-40 minutes until topping is golden brown and berry filling is bubbling.
  9. Remove from oven and let cool for at least 10 minutes to set filling.
  10. Serve warm with a scoop of creamy vanilla ice cream.

Keep butter cold to achieve a flaky, crispy topping. Do not overmix the dough to avoid a tough crust. If topping browns too quickly, tent loosely with foil midway through baking. Let cobbler rest before serving to allow filling to set. Frozen berries can be used but should be thawed and drained well to avoid sogginess.
