Instructions

  1. Measure out 12 cups (360g) of Chex cereal into a large mixing bowl, being careful not to crush the cereal.
  2. Melt 1/2 cup (115g) unsalted butter, 1 cup (250g) creamy peanut butter, and 2 cups (340g) semi-sweet chocolate chips together in a microwave-safe bowl. Heat for 30 seconds, stir, then repeat in 15-second intervals until smooth and glossy.
  3. Stir in 1 teaspoon vanilla extract and a pinch of salt into the melted mixture.
  4. Pour the chocolate-peanut butter mixture over the Chex cereal immediately and gently fold to coat evenly using a spatula or wooden spoon.
  5. Transfer the coated cereal to a large resealable plastic bag or keep it in the mixing bowl.
  6. Add 1 1/2 cups (180g) sifted powdered sugar to the bag or bowl, seal tightly, and shake vigorously until every piece is coated.
  7. Spread the coated cereal on a parchment-lined baking sheet in a single layer and let cool completely for 15-20 minutes until the coating hardens.
  8. Once cooled, break up any clusters gently with your hands or a spatula.
  9. Store in an airtight container at room temperature for up to one week.
