  • 3/4 cup (150g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons almond milk (or other plant-based milk)
  • 1 cup (175g) dairy-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together 2 cups (250g) of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.
  3. In a large bowl, mix 1/2 cup (120ml) melted coconut oil, 3/4 cup (150g) brown sugar, 1/4 cup (50g) granulated sugar, and 1 teaspoon of vanilla extract until smooth.
  4. Stir in 2 tablespoons of almond milk (or your preferred dairy-free milk) until fully incorporated.
  5. Gradually add the dry mixture into the wet ingredients, stirring until a soft dough forms.
  6. Gently stir in 1 cup (175g) of dairy-free chocolate chips until evenly distributed.
  7. Scoop out about 2 tablespoons of dough for each cookie and roll into balls. Place them on the prepared baking sheet, spaced about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden but the centers still look slightly soft.
  9. Let the cookies rest on the baking sheet for 5 minutes before transferring them to a cooling rack.
