  • 2 large apples, peeled, cored, and thinly sliced (Granny Smith or Honeycrisp)
  • 2 tablespoons unsalted butter
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon nutmeg
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cubed
  • ½ cup heavy cream
  • ½ teaspoon sea salt

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan lightly with butter or non-stick spray.
  2. In a medium mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the greased springform pan to form an even layer. Bake the crust for 8-10 minutes, then let it cool.
  3. In a large mixing bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream until the mixture is silky and lump-free.
  4. Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula, then bake for 40-50 minutes or until the edges are set but the center is slightly jiggly. Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours.
  5. In a saucepan over medium heat, melt butter. Add sliced apples, brown sugar, cinnamon, and nutmeg. Cook for about 8-10 minutes, stirring occasionally, until the apples are tender and caramelized. Remove from heat and let cool.
  6. Heat sugar in a medium saucepan over medium heat, stirring constantly until it melts into a golden liquid. Add butter and stir until fully combined. Slowly pour in heavy cream, stirring, then add sea salt. Simmer for 2 minutes before removing from heat.
  7. Once the cheesecake is chilled, arrange the apple topping evenly over the surface. Drizzle the salted caramel sauce generously over the apples.
  8. Slice and serve chilled. Garnish with whipped cream and a sprinkle of cinnamon for extra flair.

Notes

Room temperature ingredients help prevent lumps in the batter. Use a water bath to avoid cracks in the cheesecake. If cracks occur, the apple topping and caramel drizzle will cover them beautifully.
