  • 1 tablespoon dark chocolate shavings
  • 1 tablespoon toasted coconut flakes
  • 1 tablespoon chopped nuts (optional, almonds or pistachios)

Instructions

  1. Combine 3 tablespoons chia seeds and 2 tablespoons unsweetened cocoa powder in a medium bowl or jar and mix briefly to distribute the cocoa evenly.
  2. Add 1 cup unsweetened almond milk, 2 tablespoons maple syrup or honey, and 1 teaspoon vanilla extract. Whisk vigorously until smooth and cocoa is fully incorporated, about 1-2 minutes.
  3. Let the mixture rest for 5 minutes, then whisk again to break up any clumps.
  4. Cover and refrigerate for at least 2 hours or overnight until the pudding thickens and holds its shape with a slight jiggle.
  5. While chilling, slice 1 cup fresh strawberries, shave 1 tablespoon dark chocolate, and toast 1 tablespoon coconut flakes in a dry skillet over medium heat for 2-3 minutes until golden and aromatic. Chop nuts if using.
  6. Once chilled, stir the pudding gently to fluff it up. Divide evenly into two bowls or jars.
  7. Top each serving with sliced strawberries, chocolate shavings, toasted coconut, and nuts.
