  • ½ cup (100g) granulated sugar
  • ½ cup (110g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • About 6 fun-size candy bars (chopped or halved, caramel-filled bars like Milky Way or Twix recommended)
  • Optional: sea salt flakes for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter with granulated sugar and brown sugar until fluffy and light, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing.
  6. Scoop about 2 tablespoons (30g) of dough, flatten slightly in your palm. Place half a fun-size candy bar piece in the center, then cover with another 2 tablespoons of dough, sealing edges well to avoid caramel leaks.
  7. Place cookie balls on the prepared baking sheets about 2 inches apart. Sprinkle sea salt flakes on top if desired.
  8. Bake for 10-12 minutes, until edges look set but centers are still soft.
  9. Let cookies rest on baking sheets for 5 minutes before transferring to a cooling rack to cool completely.
