  • 8 oz cream cheese, softened
  • ½ cup sour cream or Greek yogurt (use dairy-free yogurt to make it vegan)
  • 1 cup shredded sharp cheddar cheese
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • ½ tsp smoked paprika (optional)
  • Salt and black pepper, to taste
  • 2 tbsp fresh chives, finely chopped
  • 1 cup panko breadcrumbs
  • 2 tbsp unsalted butter, melted (or olive oil for dairy-free)
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped toasted pecans or walnuts
  • 1 tsp dried Italian herbs (oregano, basil, thyme blend)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toast the pecans or walnuts in a dry skillet over medium heat for 3–5 minutes until fragrant and lightly browned. Stir often to prevent burning. Set aside to cool.
  3. In the same skillet, melt the butter over low heat. Add the panko breadcrumbs and stir, letting them toast gently for about 4 minutes until golden and crispy. Remove from heat and stir in the Parmesan cheese, toasted nuts, Italian herbs, and red pepper flakes if using. Set aside.
  4. In a medium bowl, beat the softened cream cheese with a hand mixer until smooth and fluffy (about 2–3 minutes). Add sour cream or Greek yogurt, garlic, onion powder, smoked paprika, salt, and pepper. Continue mixing until fully combined.
  5. Fold in shredded cheddar and fresh chives with a spatula, mixing gently to keep the texture light.
  6. Transfer the creamy mixture into your baking dish or individual ramekins, smoothing the top with the back of a spoon.
  7. Sprinkle the crunchy topping evenly over the creamy base. Press lightly to adhere but don’t pack it down.
  8. Bake in the preheated oven for 20–25 minutes, until the topping is golden brown and the dip is bubbly around the edges.
  9. Remove from oven and let it cool for 5 minutes. The topping will crisp up a bit more as it rests.
  10. Serve warm with your favorite dippers such as crisp veggies, toasted baguette slices, or sturdy crackers.

Notes

If topping browns too quickly, tent with foil halfway through baking. Soften cream cheese at room temperature for at least 30 minutes to avoid lumps. Toast breadcrumbs separately in butter or olive oil for best crispiness. Can prepare creamy base a day ahead and bake just before serving. For dairy-free, use plant-based cream cheese, yogurt, olive oil, and nutritional yeast instead of Parmesan.
