  • 1 butternut squash, peeled, seeded, and cut into 1-inch cubes
  • 1 pound Brussels sprouts, halved and trimmed
  • 6 slices thick-cut bacon, chopped
  • 3 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Peel, seed, and cut your butternut squash into 1-inch cubes. Place them in a large mixing bowl.
  3. Trim the ends and remove any damaged outer leaves from the Brussels sprouts. Slice each sprout in half and add them to the mixing bowl with the squash.
  4. Drizzle 2 tablespoons of olive oil and 3 tablespoons of maple syrup over the vegetables. Sprinkle with 1 teaspoon of garlic powder, 1 teaspoon of salt, and 1/2 teaspoon of freshly ground black pepper. Toss everything together until the veggies are fully coated.
  5. Spread the vegetables out evenly on the prepared sheet pan in a single layer to ensure even roasting.
  6. Chop 6 slices of thick-cut bacon into small pieces and scatter them across the sheet pan, ensuring they’re evenly distributed.
  7. Place the sheet pan in the oven and roast for 25-30 minutes, tossing everything halfway through to ensure even cooking. The veggies should be golden and caramelized, and the bacon should be crispy.
  8. Once cooked, let the dish cool for a few minutes before serving. Transfer to a platter and enjoy warm!
