A quick and festive snack combining colorful Peeps marshmallows melted into a glossy coating over crunchy popcorn, perfect for Easter and spring celebrations.

  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1012 Peeps marshmallow chicks or bunnies, any pastel color
  • 1/4 cup (4 tablespoons) unsalted butter (56 grams)
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Pop about 1/2 cup (around 10 cups popped) of plain popcorn kernels using your preferred method. Remove any unpopped kernels and transfer popcorn to a large mixing bowl.
  2. In a microwave-safe bowl, combine 10-12 Peeps and 1/4 cup unsalted butter. Microwave in 20-second intervals, stirring in between, until smooth and glossy (about 1-1.5 minutes). Alternatively, melt over low heat in a saucepan, stirring constantly.
  3. Stir in 1 teaspoon vanilla extract and a pinch of salt into the melted mixture.
  4. Immediately pour the melted Peeps mixture over the popcorn. Gently fold the coating into the popcorn with a spatula or wooden spoon until evenly coated.
  5. Spread the coated popcorn onto a parchment-lined baking sheet in an even layer. Let cool at room temperature for 20-30 minutes until the coating is set but still chewy.
  6. Break the cooled popcorn into bite-sized clusters. Store in an airtight container at room temperature for up to 3 days.

Notes

Melt Peeps slowly in short microwave bursts or over low heat to avoid burning. Stir frequently. Coat popcorn while the marshmallow mixture is warm and fluid. Store treats at room temperature in an airtight container; avoid refrigeration to keep popcorn crisp. Reheat briefly if treats soften.
