Delicious Roasted Carrots Recipe with Candied Pecans & Goat Cheese

A simple yet elegant side dish featuring sweet roasted carrots, crunchy candied pecans, and creamy goat cheese. Perfect for both casual dinners and special occasions.

  • 1 pound carrots, peeled and cut into halves lengthwise
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup pecans, roughly chopped
  • 2 tablespoons brown sugar
  • 1 tablespoon unsalted butter
  • 1/4 cup goat cheese, crumbled
  • 1 teaspoon fresh thyme, chopped (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss the peeled and halved carrots with olive oil, honey, salt, and black pepper until well coated.
  3. Arrange the seasoned carrots in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through, until they are tender and slightly caramelized.
  4. While the carrots roast, melt the butter in a small skillet over medium heat. Add the brown sugar and stir until dissolved. Toss in the chopped pecans and cook for about 2-3 minutes, stirring constantly, until the nuts are coated and toasted. Remove from heat and let cool.
  5. Once the carrots are done roasting, transfer them to a serving platter. Sprinkle the candied pecans and crumbled goat cheese on top. Garnish with fresh thyme if desired.
  6. Serve warm and enjoy!
