  • 2 ripe avocados, peeled and mashed
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
  • 4 ounces cream cheese, softened (or dairy-free cream cheese alternative)
  • 1 tablespoon mayonnaise (optional but recommended)
  • 12 slices thinly sliced white sandwich bread, crusts removed (or gluten-free bread)
  • 1 tablespoon capers, drained and roughly chopped (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Avocado Spread (10 minutes): In a mixing bowl, mash the peeled avocados with a fork or potato masher until smooth but slightly chunky. Add softened cream cheese and mayonnaise, mixing until creamy and well combined. Stir in lemon juice and chopped dill. Season with salt and pepper to taste. Fold in chopped capers if using.
  2. Prepare the Bread (5 minutes): Lay out bread slices on a cutting board. Trim off crusts carefully. Lightly toast bread if desired. Optionally, spread a thin layer of butter on each slice.
  3. Assemble the Sandwiches (5-7 minutes): Spread a generous layer of avocado mixture evenly over half the bread slices. Layer thin slices of smoked salmon on top. Cover with remaining bread slices, pressing gently to adhere.
  4. Cut and Serve (5 minutes): Cut each sandwich into quarters, triangles, or use a round cookie cutter for circles. Arrange on a serving platter and garnish with dill sprigs or lemon slices if desired.
  5. Chill (Optional): Cover sandwiches with plastic wrap and refrigerate up to 2 hours before serving to meld flavors and keep fresh.

Notes

Use ripe but firm avocados to avoid soggy spread. Chill smoked salmon and avocado spread before assembly to keep bread from getting soggy. Assemble sandwiches no more than 2 hours before serving. For vegan version, substitute smoked carrot or beet lox and vegan cream cheese and mayo. Adding finely diced cucumber or radishes adds crunch. Avoid overstuffing sandwiches to maintain delicate texture.
