  • ½ cup finely chopped cremini mushrooms
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce or tamari

  • Salt and freshly ground black pepper, to taste
  • 1 tsp smoked paprika
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1 tsp honey or maple syrup
  • 1 tsp finely chopped pickles or relish
  • Pinch of smoked paprika
  • Pinch of garlic powder
  • Salt and pepper, to taste
  • 4 burger buns, toasted (brioche or potato buns)
  • Leafy lettuce or baby spinach
  • Tomato slices
  • Red onion slices (optional)
  • Cheese slices (cheddar or Swiss, optional)
  • Butter for toasting buns

Instructions

  1. Finely dice the mushrooms and onion, mince the garlic cloves.
  2. In a large bowl, combine ground beef, chopped mushrooms, onions, garlic, soy sauce, Worcestershire sauce, smoked paprika, salt, and pepper. Mix gently until just combined.
  3. Divide the mixture into four equal portions and shape each into a round patty about ¾ inch thick. Press a slight indentation in the center of each patty.
  4. In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, apple cider vinegar, honey, chopped pickles, smoked paprika, garlic powder, salt, and pepper. Cover and refrigerate until ready to serve.
  5. Heat skillet or grill pan over medium-high heat with a little oil or butter. Cook patties for 4-5 minutes per side, flipping once. Add cheese slices during the last minute if using.
  6. Spread butter on buns and toast in a pan or toaster until golden and crispy.
  7. Assemble burgers by spreading secret sauce on bottom bun, adding lettuce or spinach, patty, tomato slices, red onion if using, more secret sauce, and top bun.
  8. Serve immediately while hot.

Notes

Chill patties for 10 minutes before cooking if mixture feels too soft. Pressing a slight indentation in the center of patties prevents puffing. Handle mixture gently to avoid tough burgers. Secret sauce tastes better after chilling for a few hours or overnight. Use gluten-free buns and tamari for gluten-free version. Swap mayo for Greek yogurt for a healthier sauce.
