Ingredients

  • 2 cups (250g) all-purpose flour
  • 3/4 cup (180ml) warm water (about 110°F)
  • 2 1/4 tsp (7g) active dry yeast (1 packet)
  • 2 tsp (8g) granulated sugar
  • 2 tbsp (30ml) olive oil
  • 1 tsp (5g) salt
  • 1/4 cup (60g) unsalted butter, melted
  • 2 cloves fresh garlic, minced (or 1 tsp garlic powder)
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/2 cup (50g) shredded mozzarella cheese
  • 1 tsp (2g) Italian seasoning (optional)
  • 1/4 tsp (0.5g) red pepper flakes (optional)
  • Marinara sauce, for dipping (optional)

Instructions

  1. In a large bowl, dissolve yeast and sugar in warm water. Let sit for 5 minutes until foamy.
  2. Add olive oil and salt, then stir in flour until a shaggy dough forms.
  3. Turn dough onto a floured surface and knead for 4-5 minutes until smooth and elastic. Add more flour if sticky, or a splash of water if too dry.
  4. Place dough in a greased bowl, cover, and let rise in a warm spot until doubled, about 20-30 minutes.
  5. Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
  6. Punch down dough and roll into a 1/2-inch thick rectangle. Cut into 1-inch squares (about 24-28 pieces).
  7. Arrange dough squares on the prepared baking sheet, spaced slightly apart. Sprinkle mozzarella cheese evenly over the tops.
  8. Bake for 12-15 minutes, until puffed, golden brown, and cheese is bubbly.
  9. While baking, melt butter in a small saucepan. Add minced garlic and cook on low for 1-2 minutes until fragrant (do not brown).
  10. When bites come out of the oven, brush generously with garlic butter. Sprinkle with Parmesan cheese, Italian seasoning, and red pepper flakes if using.
  11. Let cool for a couple of minutes. Serve warm with marinara sauce for dipping.

Notes

For gluten-free, use a 1:1 gluten-free flour blend and add 1/2 tsp xanthan gum if needed. For vegan, use vegan butter and dairy-free cheeses. Let bites cool on a wire rack to avoid soggy bottoms. Store leftovers in an airtight container at room temperature for 1 day or refrigerate for up to 3 days. Freeze for up to 2 months and reheat in the oven for best texture.
