  • 1 cup (200 g) granulated sugar
  • 2 tablespoons dried culinary lavender buds (food-grade)
  • 2 shots (60 ml) freshly brewed espresso or strong coffee
  • 1 cup (240 ml) whole milk or milk alternative (oat or almond milk recommended)
  • 1 tablespoon lavender syrup (adjust to taste)
  • ½ cup (120 ml) whole milk, chilled (for foam)
  • 1 teaspoon lavender syrup (for foam)

Instructions

  1. Make the Lavender Syrup: In a small saucepan, combine 1 cup water and 1 cup sugar. Bring to a gentle boil, stirring to dissolve sugar. Remove from heat and stir in 2 tablespoons dried lavender buds. Cover and steep for 15 minutes.
  2. Strain the Syrup: Using a fine mesh strainer, strain out the lavender buds into a clean jar or bottle. Let the syrup cool completely. Store in the fridge up to 2 weeks.
  3. Brew the Espresso: Prepare 2 shots (60 ml) of espresso or strong coffee. Pour into your favorite mug.
  4. Steam the Milk: Heat and froth 1 cup (240 ml) milk until silky and smooth (about 150°F / 65°C). If no steamer, warm gently and froth with a handheld frother or French press.
  5. Mix the Latte: Stir 1 tablespoon lavender syrup into the espresso. Slowly pour in the steamed milk, holding back the foam with a spoon.
  6. Prepare the Creamy Floral Foam: Chill ½ cup milk, then froth with 1 teaspoon lavender syrup until thick and creamy. Spoon foam gently on top of the latte.
  7. Final Touch (Optional): Sprinkle a few dried lavender buds or a pinch of edible glitter on the foam for decoration.

Notes

Use food-grade dried lavender buds for best flavor. For dairy-free foam, oat milk is recommended. Avoid over-steeping lavender to prevent bitterness. Froth milk to velvety microfoam, not stiff foam. Syrup can be stored refrigerated up to two weeks. Latte is best served fresh; reheat gently if needed.
