Instructions

  1. If desired, pulse the rolled oats in a food processor for 15-20 seconds for a finer texture.
  2. In a mixing bowl, combine peanut butter and honey until smooth and well incorporated.
  3. Stir in oats, chia seeds, and mini chocolate chips until evenly distributed and sticky.
  4. Scoop about 1 tablespoon of mixture and roll into balls. Place on a lined baking sheet or plate. Dampen hands with water if mixture is too sticky.
