A quick and festive holiday appetizer featuring a creamy brie wheel topped with a sweet-tart cranberry and toasted pecan mixture, baked to melty perfection.

  • 8 ounces (225 grams) Brie cheese wheel, whole with rind intact
  • 1 cup (about 100 grams) fresh or frozen cranberries
  • 1/2 cup (50 grams) chopped pecans, lightly toasted
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon freshly squeezed orange juice
  • 1 teaspoon finely grated orange zest (optional)
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup
  • A few sprigs fresh thyme (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Toast the pecans in a dry skillet over medium heat, stirring frequently for 3 to 5 minutes until fragrant and lightly browned. Set aside to cool.
  3. In a mixing bowl, combine cranberries, brown sugar, orange juice, orange zest, and ground cinnamon. Mix gently until sugar starts dissolving and cranberries are evenly coated.
  4. Place the brie wheel in an oven-safe baking dish.
  5. Spoon the cranberry mixture evenly over the top of the brie, then sprinkle the toasted pecans across the surface.
  6. Drizzle honey or maple syrup over the topping for a glossy finish.
  7. Bake for 15 to 20 minutes until the brie is soft to the touch and beginning to ooze around the edges, and the topping is bubbling and golden.
  8. Remove from oven and optionally scatter fresh thyme leaves over the top.
  9. Serve warm with sliced baguette, crackers, or apple slices.

Notes

Toast pecans gently on the stove to avoid burning. Let baked brie rest for 5 minutes after baking to thicken the cheese for neater serving. Use a snug baking dish to keep cheese contained. Adjust sweetness of cranberry topping to taste. For dairy-free, use vegan brie and maple syrup instead of honey.
