  • 4 cups water (for boiling pearls)
  • 1/4 cup brown sugar
  • 2 black tea bags (Assam or Earl Grey recommended)
  • 2 cups hot water (for brewing tea)
  • 1 cup milk (whole milk or dairy-free alternatives like almond, oat, or coconut milk)
  • 2 tablespoons sweetened condensed milk (optional)
  • Ice cubes as needed

Instructions

  1. Bring 4 cups (950 ml) of water to a rolling boil in a medium saucepan. Add 1/2 cup (85 g) of tapioca pearls to the boiling water. Stir gently to prevent sticking. Cook uncovered for about 20-25 minutes, stirring occasionally until pearls are soft and chewy.
  2. Reduce heat to low and simmer the pearls for another 15 minutes. Remove from heat, cover, and let the pearls rest for 10-15 minutes to achieve perfect chewy texture.
  3. Drain the pearls using a strainer and rinse under cool water to stop cooking. Transfer to a bowl and stir in 1/4 cup (50 g) brown sugar while warm. Let soak while preparing tea.
  4. Steep 2 black tea bags in 2 cups (475 ml) of hot water for 5-7 minutes in a heatproof pitcher or teapot. Remove tea bags and let tea cool slightly.
  5. Add 1 cup (240 ml) milk to the brewed tea. Stir in 2 tablespoons (30 ml) sweetened condensed milk if desired for extra creaminess and sweetness. Adjust sweetness to taste.
  6. Fill glasses halfway with ice cubes. Spoon in about 1/4 cup (60 ml) sweetened tapioca pearls per glass. Pour creamy tea over pearls and ice. Stir gently and serve with a wide straw.

Notes

If pearls harden, warm them slightly with hot water before serving. Tapioca pearls are best served fresh; store pearls and tea separately if prepping ahead. Use dairy-free milk and coconut cream for vegan version. Adjust sweetness with honey or maple syrup for a healthier option.
