Easy Crispy Brie and Fig Jam Puff Pastry Bites

These quick and easy puff pastry bites combine crispy, buttery pastry with melty brie and sweet fig jam for a crowd-pleasing snack perfect for entertaining.

  • 1 sheet puff pastry (thawed, about 12 x 12 inches)
  • 8 ounces brie cheese, rind removed and cut into 1/2 inch cubes
  • 3 to 4 tablespoons fig jam
  • 1 large egg, beaten (for egg wash)
  • 1 teaspoon fresh thyme leaves (optional)
  • Light sprinkle of ground black pepper
  • All-purpose flour (for dusting surface)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Lightly flour your work surface and roll out the thawed puff pastry sheet to smooth any creases and slightly enlarge it to about 12 x 12 inches.
  3. Cut the pastry into 2.5-inch squares, yielding roughly 16 squares.
  4. Remove the rind from the brie and cut into small 1/2 inch cubes.
  5. Place one brie cube in the center of each pastry square. Top with about 1/2 teaspoon of fig jam.
  6. Sprinkle a few fresh thyme leaves and a tiny pinch of black pepper onto the fig jam.
  7. Bring the corners of each square together, pinching lightly to seal and form a pouch.
  8. Brush each pastry bite lightly with beaten egg for a golden, crispy crust.
  9. Bake for 15 to 18 minutes until pastry is puffed and deep golden brown.
  10. Let the bites rest for 5 minutes on the tray before transferring to a serving platter.

Notes

Keep puff pastry cold until just before use to ensure crispiness. Do not overfill to avoid soggy bottoms. Brush with egg wash for a golden crust. Rotate baking sheet halfway through baking for even browning. Store leftovers in an airtight container in the fridge for up to 2 days and reheat in the oven to maintain crispness.
