  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder

  • Juice of 1 lime
  • A handful of fresh cilantro, chopped (optional)
  • 8 small flour or corn tortillas

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the chicken breasts or thighs into thin strips about 1/2 inch wide. Slice the bell peppers and onion into similar-sized strips.
  3. In a large mixing bowl, combine olive oil, smoked paprika, chili powder, cumin, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Stir until well combined.
  4. Add the sliced chicken, bell peppers, and onion to the bowl. Toss everything until well coated in the spice mixture.
  5. Line a large rimmed baking sheet with parchment paper or a silicone baking mat if available. Spread the chicken and vegetables out in a single layer with space between pieces.
  6. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until chicken edges are golden and peppers are softened but still slightly crisp.
  7. Remove from oven and immediately squeeze fresh lime juice over the chicken and veggies. Toss gently to combine.
  8. Warm the tortillas in a dry skillet over medium heat or wrap in foil and heat in the oven for 5 minutes.
  9. Serve garnished with chopped cilantro if desired, alongside tortillas and your favorite toppings such as sour cream, guacamole, salsa, or shredded cheese.
