Instructions

  1. Drain and rinse the canned beans and diced tomatoes to remove excess sodium and canned flavor. Set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the finely diced onion (if using) and sauté for 3-4 minutes until translucent and fragrant.
  3. Add the minced garlic and red pepper flakes (if using). Stir constantly for about 30 seconds until garlic is aromatic but not browned.
  4. Pour in the canned diced tomatoes with their juices. Break up large chunks with a wooden spoon. Let simmer for about 5 minutes to thicken the sauce.
  5. Stir in the rinsed cannellini beans and cook for another 5 minutes, stirring occasionally, until beans are heated through and tender.
  6. Season with salt, black pepper, and fresh lemon juice. Taste and adjust seasoning as needed.

  8. Optional: Transfer to a baking dish, sprinkle with bread crumbs and grated Parmesan, then bake at 375°F (190°C) for 10 minutes to add a crunchy topping.
