A quick and tasty recipe featuring seasoned ground turkey served in crisp lettuce leaves, perfect for a healthy lunch or dinner that is light yet flavorful.

  • 1 head green leaf or butter lettuce leaves (romaine or large cabbage leaves as alternatives)
  • 1 tbsp olive oil
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp taco seasoning (store-bought or homemade blend of chili powder, cumin, paprika, oregano, and a pinch of cayenne)
  • 1 tbsp tomato paste
  • 1/4 cup water
  • 1 tbsp fresh lime juice
  • Salt and pepper to taste
  • Optional toppings: diced avocado, chopped cilantro, shredded cheese (cheddar or Monterey Jack), sour cream or Greek yogurt, jalapeño slices

Instructions

  1. Prepare the lettuce leaves: Gently separate the leaves from the head, rinse under cold water, and pat dry with paper towels. Set aside on a plate lined with a clean kitchen towel to keep them crisp (about 5 minutes).
  2. Heat the skillet: Place a large non-stick skillet over medium heat and add 1 tablespoon of olive oil. Let it warm until shimmering but not smoking.
  3. Sauté the onions and garlic: Add the finely chopped onion and cook for 3-4 minutes until softened and translucent. Stir in the minced garlic and cook for another 30 seconds to release aroma, but don’t let it brown too much.
  4. Cook the ground turkey: Add the turkey to the skillet, breaking it apart with a wooden spoon or spatula. Cook for 6-8 minutes or until no pink remains, stirring occasionally to brown evenly.
  5. Add seasoning and tomato paste: Stir in the taco seasoning and tomato paste. Mix well to coat the turkey evenly. Pour in 1/4 cup (60 ml) of water to help the spices blend and create a slightly saucy texture.
  6. Simmer and thicken: Lower the heat and simmer for about 5 minutes, stirring occasionally. The mixture should thicken slightly and smell fragrant with spices. Add a splash more water if it looks dry.
  7. Season to taste: Add salt and pepper as needed. Remove from heat and stir in fresh lime juice to brighten the flavors.
  8. Assemble the wraps: Spoon a generous amount of the turkey mixture into each lettuce leaf. Top with your choice of diced avocado, shredded cheese, cilantro, jalapeños, or a dollop of sour cream.
  9. Serve immediately: Enjoy fresh for maximum crunch and flavor. The filling can be prepared ahead and reheated gently before serving.

Notes

If lettuce leaves feel floppy, chill longer or wrap in a damp paper towel before serving to keep crisp. Let turkey brown without stirring too often at first to develop flavor. Toast taco seasoning spices lightly if making your own blend. Avoid overcooking turkey to prevent dryness. For dairy-free, skip cheese and sour cream or use plant-based alternatives. Store turkey filling separately from lettuce for up to 3 days in the fridge.
