  • 3 cups mini marshmallows
  • 3 tablespoons unsalted butter, melted
  • 1 cup red, white, and blue candy-coated chocolates or sprinkles
  • 1/2 cup white chocolate chips (optional)
  • A pinch of salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Pop about 1/2 cup of unpopped popcorn kernels using your preferred method until you have roughly 10 cups of popped popcorn. Remove any unpopped kernels carefully.
  2. In a microwave-safe bowl, combine 3 cups of mini marshmallows with 3 tablespoons of unsalted butter. Microwave in 30-second increments, stirring each time until the mixture is smooth and melted, about 1 to 1 1/2 minutes total. Alternatively, melt on low heat in a saucepan, stirring constantly. Be careful not to burn.
  3. Stir in 1/2 teaspoon of vanilla extract and a pinch of salt into the melted marshmallow mixture. Mix well.
  4. Pour the melted marshmallow mixture over the popcorn in a large mixing bowl. Use a wooden spoon or heatproof spatula to gently toss the popcorn and marshmallow mixture together, coating the popcorn evenly without crushing it. Work quickly as the mixture will start to harden.
  5. Immediately sprinkle 1 cup of red, white, and blue candy-coated chocolates or festive sprinkles over the coated popcorn. Gently fold them in to spread evenly.
  6. If using white chocolate chips, melt them separately in the microwave in 30-second bursts until smooth. Drizzle over the popcorn mix for extra sweetness and a festive look.
  7. Transfer the popcorn mixture onto a parchment-lined baking sheet, spreading it out in an even layer. Let cool completely at room temperature for about 15-20 minutes to set the coating and keep the popcorn crunchy.
  8. Once cooled and hardened, gently break apart any large clusters. Serve immediately or store in an airtight container.

Notes

Use mini marshmallows for better melting and coating. Melt marshmallows gently using short microwave bursts or low stovetop heat to avoid burning. Add candies while marshmallow coating is warm but not too hot to keep colors vibrant. Let popcorn cool at room temperature to maintain crunch. For dairy-free version, substitute butter with coconut oil and use vegan marshmallows. Toast marshmallow mixture in a low oven for 5-7 minutes to reduce stickiness if desired.
