  • 4 medium Roma tomatoes (about 1 pound or 450g), quartered
  • 1 small white onion, peeled and quartered
  • 1 medium fresh jalapeño, seeded for milder heat or keep seeds for extra kick
  • ¼ cup fresh cilantro (about 15g), packed
  • 1 large garlic clove, peeled
  • Juice of 1 medium lime (about 2 tablespoons or 30ml)
  • ½ teaspoon salt, or to taste
  • Pinch of ground black pepper
  • Optional: ¼ teaspoon ground cumin

Instructions

  1. Rinse Roma tomatoes and jalapeño. Quarter the tomatoes and onion, peel the garlic, and roughly chop the cilantro. Remove jalapeño seeds if less heat is desired.
  2. Add tomatoes, onion, jalapeño, garlic, and cilantro to blender or food processor. Pulse 6-8 times until chunky salsa texture is achieved. Avoid over-blending.
  3. Add lime juice, salt, pepper, and optional cumin. Pulse 2 more times to combine. Taste and adjust seasoning as needed.
  4. Transfer salsa to a mixing bowl and let rest at room temperature for at least 10 minutes to allow flavors to meld.
  5. Serve with chips, tacos, or grilled meats. Store leftovers in an airtight container in the refrigerator for up to 3 days. Bring to room temperature before serving.

Notes

Pulse the ingredients instead of blending continuously to keep a chunky texture. Let the salsa rest for at least 10 minutes to develop flavor. Adjust salt and lime juice at the end to balance sweetness and acidity. For milder salsa, remove jalapeño seeds. Store in airtight container for up to 3 days and bring to room temperature before serving.
