A comforting and indulgent breakfast bake combining gooey cinnamon rolls with a custardy French toast texture, perfect for busy mornings and weekend brunches.

Ingredients

Scale
  • One 12-ounce can (about 8 rolls) store-bought cinnamon rolls (recommend Pillsbury)
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or 2% milk
  • 1/2 cup (120 ml) heavy cream
  • 1/3 cup (65 g) granulated sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon salt
  • Powdered sugar for dusting or optional glaze
  • 2 tablespoons melted butter for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch (23×33 cm) baking dish with melted butter.
  3. Cut the cinnamon rolls into quarters, keeping some icing intact for gooey pockets.
  4. Spread the cinnamon roll pieces evenly in the greased baking dish, arranging loosely.
  5. In a large bowl, whisk together eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt until smooth and slightly frothy (about 1-2 minutes).
  6. Pour the custard evenly over the cinnamon roll pieces and press gently with a spatula to help soak.
  7. Let the bake sit for 10 minutes at room temperature to absorb the custard.
  8. Place the baking dish in the preheated oven and bake for 35-40 minutes until the top is golden brown and custard is set but soft in the center.
  9. If the top browns too quickly, tent loosely with aluminum foil to prevent burning.
  10. Remove from oven and let cool for 5 minutes; the bake will firm up slightly but remain gooey.
  11. Dust with powdered sugar or drizzle leftover icing from cinnamon rolls before serving warm.

Notes

Use room temperature eggs and milk for smooth custard. Let the bake rest before baking to absorb custard and avoid sogginess. Tent with foil if browning too fast. Optional: sprinkle extra cinnamon before baking or add chopped toasted nuts for texture. Can substitute dairy and gluten ingredients for dietary needs.
