Instructions

  1. In a mixing bowl, combine 4 ounces of softened cream cheese with 2 tablespoons finely chopped fresh parsley, 1 tablespoon chopped fresh chives, 1/4 teaspoon garlic powder, and the zest of half a lemon. Season with salt and black pepper. Mix until smooth and evenly incorporated (about 5 minutes).
  2. Lay each 10-inch flour tortilla flat on a clean surface. Spread 2 to 3 tablespoons of the herbed cream cheese mixture evenly over each tortilla, leaving a half-inch border around the edges (about 3 minutes).
  3. Layer 4 ounces of thinly sliced deli turkey evenly on top of the cream cheese spread on each tortilla. Overlap slices slightly to keep the roll compact. Add optional cucumber or carrot slices if desired (about 3 minutes).
  4. Starting from one edge, roll each tortilla tightly but gently, keeping the filling snug inside. Use your fingers to tuck the filling as you roll. Wrap each pinwheel tightly in plastic wrap or parchment paper to hold its shape (about 4 minutes).
  5. Place wrapped pinwheels in the refrigerator for at least 30 minutes to firm up the cream cheese and make slicing easier.
  6. Remove plastic wrap and slice each roll into 1-inch rounds. Arrange on a plate or pack into lunchboxes (about 5 minutes).
