Instructions

  1. In a medium bowl, whisk together 1/2 cup honey, 1/3 cup low sodium soy sauce, 3 minced garlic cloves, 2 tablespoons rice vinegar, and 1/4 cup water or chicken broth. Add a pinch of red pepper flakes if desired. Set aside.
  2. Pat 6 bone-in, skin-on chicken thighs dry with paper towels to remove excess moisture.
  3. Optional: Heat a skillet over medium-high heat with 1 tablespoon oil. Sear chicken thighs skin-side down for 3-4 minutes until golden and crispy, then flip and cook for another 2 minutes.
  4. Place the chicken thighs in a single layer in the crockpot, skin side up if seared.
  5. Pour the honey garlic sauce evenly over the chicken, coating each piece.
  6. Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken is tender and falling off the bone.
